Taco Bowls

Ingredients:

  • 1 pound ground beef or turkey (best beef option- lowest fat content)

  • 1 packet taco seasoning (try lower-sodium!)

  • 1 tbsp olive oil

  • 5 bell peppers (sliced into strips)

  • 1 onion (sliced into strips)

  • 1 can black beans

  • 1/2-1 cups of rice- white, brown, jasmine, etc.

    (rice quantity dependent on current goals)

    Want more flavor?

    Add salsa, light sour cream, hot sauce, and/or guacamole when serving!

Preparation:

Step 1

Begin cooking desired amount of rice.


Step 2

While waiting for a medium sized pan on medium-high heat, wash and cut peppers and onion into thin strips. Add 1 tbsp of olive oil to pan and cook veggies on medium heat until completely cooked (about 15-20mins)


Step 3

Heat medium sized pan over medium heat and add ground beef or turkey and break it apart until it covers the surface of the pan. Once meat is almost completely cooked, stir in the taco seasoning and cook an additional 6-8 minutes, stirring occasionally. Remove from heat.


Step 4

Portion out meat, veggies and rice into 4 servings. If eating right away, heat up beans separately in microwave.
