Jerk Chicken

Ingredients:

  • 1-1.5 lb skinless, boneless chicken thighs (or chicken breasts)

  • 1 packet of Caribbean Jerk seasoning (Walmart)

  • 1 can of pineapple chunks or tidbits

  • 1/2 tsp garlic powder

  • 1 cup veggies of choice

  • For serving (optional): 1/2-1 cups of cooked rice- white, brown, jasmine, etc. (rice quantity dependent on current goals)

Preparation:

Step 1

Season chicken breasts/thighs with jerk seasoning, garlic powder along with salt & pepper to taste. Cook chicken to your preference until it reaches 165 degrees (air fryer, skillet, oven).


Step 2

While chicken is cooking, prepare your choice of veggies along with 4 servings of rice.


Step 3

Portion chicken, veggies and rice into 4 servings.
